Thursday 18 October marked the publication of the new GaultMillau Guide, Austria’s most important gourmet bible for the hospitality trade, connoisseurs and lovers of culinary excellence. For the first time ever the Singer’s Tiroler Stube was awarded the sought after Toque, achieving 13 points in this popular gourmet guide. The Singer family is absolutely delighted and expresses their heartfelt gratitude to long serving Chef Thomas Kunath & team.

An excerpt of the Guide GaultMillau 2013:
‘Singer’s Tiroler Stube is a newcomer – at least it is for us. The restaurant is part of one of Berwang’s larger hotels and à la carte guests sit by side with hotel guests. One can choose between two menus, either 4 or 7 courses – whereby it is possible to skip or interchange individual dishes. The ‘joy of life’ menu started with an excellent crayfish terrine, prawn tartar & iced shrimp. The dish showed considerable refinement and creativity in the visual presentation as well as clean, faultless taste. Likewise, the 2 (!) soups: Bloody Mary classic and clear essence were two cold tomato soups, one red as the classic cocktail, a clear consommé the other. Both excellent and again beautifully presented. The main course was simply named ‘Exquisite veal’ and included a pink fried medallion, fried sweetbreads and some thin slices of veal tongue. Skillful craftsmanship, impeccable presentation and solid, professional service.’

The Brau Union Austria and GaultMillau are proud of our traditional Austrian cuisine, demonstrated in the annual awards for outstanding services to Austrian cooking and presented to one restaurant or inn in each of the Austrian provinces. And since this kind of cooking is inextricably linked with a well tended beer culture, these awards are given to establishments serving exemplary quality food and beer. Inspectors pay particular attention to the variety of beers on offer, the service personnel’s professional knowledge, the presentation and of course the use of appropriate glasses.

The most competent gourmet guide the country
For the 34th time the highly competent, anonymous GaultMillau team has judged seriously, strictly and without compromise. 53 testers crisscrossed Austria for a year, evaluating the most important culinary establishments in the country, to analyze the results according to GaultMillau’s international rules and to find the best of the best.

GaultMillau judges by the French school grading system with points from 0 to 20 – points are awarded strictly to chefs only. Service, atmosphere and cellar of the restaurant are described in the relevant text. The most rigorous evaluation is given to quality, origin of produce, innovation, creativity and technical expertise. GaultMillau does not give preference to any particular style of cooking – it can be classic, modern, vegetarian or exotic. However, GaultMillau prefers truly creative chefs to copycats and simple, honest food to show mastery.
